Second Crack (Full City Plus Roast): The beans undergo the second, even more violent cracking and enter Full City Plus. The roast will also reveal more layers of intensity to the taste.


Black Roast (French Roast): The smoke will grow unpleasant, the sugars take on as much heat as they can with out ruining the flavor, and the beans' entire structure will break down. This is the maximum limit of roasting inside the limits of flavor.


Burn If the roaster hasn't quit roasting by this point the smell can change from unpleasant to horrid, and the beans will begin to burn.
