Brief consumer section

The brief consumer section that appears in each chapter and is separate from the main text is another novel addition. In addition to information and links about safe food handling techniques, these sections highlight information about the microorganism or toxin that will be of interest to consumers. Separate from the technical vocabulary, there is a consumer glossary at the end of the book.

The FDA, the Centers for Disease Control and Prevention (CDC), and the U.S. Department of Agriculture Food Safety Inspection Service are just a few of the federal agencies that are mentioned in various chapters as having an interest in food safety. These are the main organisations that work together to look into foodborne illness outbreaks, prevent foodborne illness, and advance the field of food safety.

To give readers access to the most recent information on outbreaks or occurrences of foodborne disease, links to recent articles from the CDC's Morbidity and Mortality Weekly Reports are included in a few selected chapters. Hypertext links to pertinent Entrez abstracts and GenBank genetic loci are supplied at the end of a few of the chapters about harmful bacteria.
